Super Bowl Snacks and Such

Happy Wednesday Ladies!
 
Hope you are all having a great week!  If you guys read here often, or follow me on social media, you know me and my little crew over here LOVE football!  There is nothing better than spending a Sunday, hanging out with my crew watching some football!  And of course, eating lots of yummy football food is a MUST!
 
  We are extra super excited this year for the Super Bowl because The Carolina Panthers are playing!  I have been a NY Jets fan since I was in high school, and they will always be my #1 team, but when I moved to Charlotte 10 years ago, the Panthers became my second favorite team.  And it really is OK to have two favorite teams!  While living in Charlotte I was fortunate to attend many games, and the atmosphere in Charlotte when the Panthers play is just amazing!  I seriously believe that Carolina has the BEST, MOST LOYAL fans in the NFL.  The entire city gets behind that team!  We lived in South Charlotte, and I was fortunate enough to meet some of the players, as they lived near me.  So needless to say, we are freaking excited to watch the Panthers play in the Super Bowl this year!
 
This pretty much sums it up!
 
For as long back as I can remember, since I have had kids, we have always stayed home and watched the big game with the kids.  One year, Mark and I went to a party one of his co-workers hosted, and though it was nice, we both decided, home, with the kids, is definitely where we prefer to watch the game.  I notice that at Super Bowl parties, the guys usually watch the game, the kids play, and the wives usually talk...well, I actually want to watch the game, so do my kids, and we have the best time watching it all together!
 
We always let the boys stay up until the end of the game...they should seriously start the game earlier! 
 
Every year we pretty much eat the same things for the Super Bowl, it is kind of like a tradition and Jack and AJ really look forward to it, and have already started talking about what we are going to be eating!
 
I always buy some fun, football paper products.  I usually just grab some football plates and napkins and some helium balloons from the grocery store.  It really is those little tiny things, that our kids remember most and look the most forward to.
 
I never took any pictures of our food from last year, so I don't have any personal pics to share with you guys, but I am going to share some of our favorite Super Bowl Snacks to eat!
 
I always put out bowls of chips and dip, and always a fun little veggie platter.  If my kids can dip it in ranch, they will eat just about anything!
 
Here is basically what you will find at our house on Super Bowl Sunday!
 
POTATO SKINS
We love potato skins, and we always make them ourselves, so much cheaper and so much more delicious.  We just cook like 10 potatoes, scoop them out (Olivia eats that part) and then fill them with lots of bacon and cheese, bake them and serve them up with some sour cream!  So darn delicious!
 
CHEESE/CHIPS/DIP
We love cheese over here, and my kids love being able to dip stuff!  We always set out a little platter with some crackers, a few bowls of chips, some French onion dip, and a few of our favorite cheeses.  Right now we are loving pepper jack cheese with jalapenos.  AJ has a strong love for salsa, so we will of course have some tortilla chips and salsa!
 
SAUSAGE, PEPPERS & ONIONS
Pretty much every Sunday during football season we eat these sandwiches.  So we always have it for the super bowl also!  I love it because I can throw it all together in the morning, and just throw it in the crock pot and it's ready for later in the day!  I love letting it cook all day, it is so yummy!
 
CHICKEN NUGGETS
Mark makes the absolute best homemade chicken nuggets I have ever tasted.  Chick Fill A has got nothing on him:)  This is another thing, we can make ahead and just heat up.   We love having a big platter of these on the table, with a few dipping sauces.
 
MAC & CHEESE
The Super Bowl of 1993, my first super bowl as a mom...it was the day I made the best ever mac and cheese.  23 years later, this is still one of my favorite things to make, and every single year for the Super Bowl for the past 22 years I have made this...and once again we will make it again this year.  I make it a few other times during the year, but my kids would be completely devastated if we didn't have it!  I am going to share the recipe with you, it is hands down our favorite! 
 
When I make this I always double this recipe, it tastes even better left over:)
 
2 cups uncooked elbow macaroni
1/4 cup butter or stick margarine
1/4 cup all purpose flour
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ground mustard
1/4 tsp Worcestershire sauce
2 cups milk
2 cups shredded sharp cheddar cheese
handful of breadcrumbs
 
1.  Heat oven to 350.
 
2.  Cook macaroni as directed on package.
 
3.  While macaroni is cooking, melt butter in 3 quart saucepan over low heat.  Stir in flour, salt, pepper, mustard and Worcestershire sauce.  Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.  Stir in milk.  Heat to boiling, stirring constantly.  Boil and stir 1 minute; remove from heat.  Stir in cheese until melted.
 
4.  Drain macaroni.  Gently stir macaroni into cheese sauce.  Pour into ungreased casserole dish.  Sprinkle breadcrumbs over the top.  Bake uncovered 20-25 minutes or until bubbly!
 
ENJOY!
 
This is probably our favorite thing to eat during the super bowl!
 
COOKIE CAKE
For the past 7 or 8 years we have always had a cookie cake, the kids love it!  I do too...I mean a big giant chocolate chip cookie with frosting....YUM!
 
CUPCAKES
I make cupcakes every year for the super bowl, and usually make the icing the color of the team we are rooting for!  This year there will be lots of blue and black over here!  GO PANTHERS!

  1. I am so freaking excited!!! I can't wait to see our Panthers bring home a victory!! Also, all this food sounds delicious and is not good for this girl on a diet...eek!! But I think eventually I'll have to splurge and try that mac n cheese because...oh my gosh, yum!!

  4. We don't have any horses in the race (so to speak) but we have been going to our friends house for a SB party for the last 3 years and we love it! She does really fun games and betting is going on and everyone (wives included- no kids) gets into the game! I was going to take bacon wrapped dates this year but since I don't have my kitchen all back together, its KFC hot wings for us to take! Lots of beer will be consumed and lots of mexican food. We are in California so we eat a lot of mexican food! Tony and I are rooting for the Panthers so lets go Boys!!

  5. Always looking for a good Mac & Cheese recipe so I'm definitely going to try yours! Could you please give the directions on the sausage and pepper in the crockpot?

    1. Hey steph! I makes my sausage and peppers how my mom made them for us growing up,,,,,
      I cook the sausage on the stove top, I brown it with some Olive oil then cut them lengthwise and finish cooking them. While they are cooking I saute the onions and peppers in a splash of olive oil, until they are soft and carmalized. Once it's all done I throw it all in the crock pot with like half a jar of marinara sauce and just cook it on low for like 5-6 hours. We love it a good hard roll!!! Have a great day!!!

    1. Hi here. Believe it or not all that he uses is McCormick beer batter, he mixes it with a little bit of water and coats the cut up chicken in it and then he throws it in the deep fryer. They are so yummy and don't have a real "fried" taste to them if that makes sense

  7. All that food sounds so yummy!! It is so nice that you all enjoy the game together!! My hubby and I will be watching, but our girls couldn't care less. Hubby is cheering for Carolina, but I'm cheering for Denver....I always love to cheer for the underdog ;)

    1. We are a huge football family! I love that it's something we all can enjoy together ! Even Olivia is pretty excited because the panthers are in it. I'm a Peyton manning fan for sure...such a great guy but we are definitely pulling for Carolina. Thanks for stopping by today. Have a great night
