What's Up Wednesday

Happy Wednesday Ladies!

What We're Eating This Week:
We are still in the process of unpacking and getting settled in, so I haven't a clue what the heck we will be eating this week!
 
What I'm Reminiscing About:
With being so far from family now, I am definitely reminiscing about all the fun times I have spent with family lately!
 
What I'm Loving:
I am LOVING my new dishes from Pioneer Woman!
 
What We've Been Up To:
Packing and unpacking...I am OVER it!
 
What I'm Dreading:
I am definitely dreading not being able to spend the holidays this year with my mom!
 
What I'm Working On:
Just getting our house all set up!
 
What I'm Excited About:
I am super excited that the holidays are right around the corner!
 
What I'm Watching/Reading:
With all that I have had going on I haven't been able to read lately...but I am definitely getting in my favorite shows....Criminal Minds, NCIS and of course a whole lot of NFL football!
 
What I'm Listening To:
Right now everyone in my house is still asleep and I am listening to absolutely NOTHING and it's glorious!
 
What I'm Wearing:
Lately I have been wearing nothing but leggings, yoga pants and tshirts...the perfect moving outfit!
 
What I'm Doing This Weekend:
It's Halloween Saturday so we will be Trick-or-Treating and doing lots of candy eating this weekend for sure!
 
What I'm Looking Forward To Next Month:
Next month my sweet AJ turns 12...I am not even sure how that is possible, but it is happening and I am definitely looking forward to celebrating my little guy!
 
What Else Is New:
Everything is pretty "new" for us right now...new house, new state...I will be blogging about it soon!
 
Favorite Thanksgiving Recipe:
Chocolate Raspberry Cheesecake:
1 Ready Crust Chocolate Pie Crust
6 oz. cream cheese softened
1 can 14 oz., eagle brand sweetened condensed milk
1 gg
3 Tbsp. lemon juice
1 tsp vanilla extract
1 cup frozen raspberries
Chocolate glaze**
 
1.  Preheat oven to 350.  With mixer, beat cream cheese until fluffy, gradually beat in the milk until smooth.  Add egg, lemon juice and vanilla, mix well.
 
2.  Arrange raspberries on bottom of the crust.  Slowly pour cheese mixture over the fruit.  Bake 30-35 minutes or until center is almost set.  Cool.
 
3.  Top cheesecake with the chocolate glaze, chill!
 
**Chocolcate glaze:  in small saucepan over low heat, melt 2 (1 oz each) squares of semi sweet baking chocolate with 1/4 cup whipping cream.  Cook and stir until thickened and smooth.  Remove from heat!
 
This is one of my favorite things to make and has been a staple on our Thanksgiving table for the past 15 years!

    1. With my husband just starting his new job and not having any vacation time this year we won't be able to travel during the holidays.
