Friday Favorites

Happy Friday Ladies!

ONE
Well the Super Bowl didn't exactly turn out the way we had hoped over here, however the Panthers had such an amazing season and even though it didn't end with a Super Bowl victory, they are still my favorite!  Keep pounding...next year is going to be GREAT!
 
 
TWO
We love a long weekend over here!  Olivia has off today, Monday and Tuesday and the boys have Monday and Tuesday off!  Extra time getting to hang out with my 3 favorite little kids is always a favorite for me!
 
 
THREE
The weather has been on the cooler side lately, and I am LOVING it!  I have to chuckle a bit, I was dropping Olivia off to school last week, and it was chilly in the morning, but by no means freezing in my mind.  However we pulled into carline all the safety patrol kids and the teachers had on their winter coats and gloves, and here I was dropping my daughter off to school in a fleece zip up sweatshirt.  I guess we haven't totally acclimated yet!  I am soaking up all this cool weather, because I know very soon it is going to GET and STAY HOT!!!!
 
 
FOUR
Since meeting Mark, I have slowly been becoming a small NASCAR fan.  Living in Charlotte and the position Mark had, we had the opportunity to go to many races and lots of behind the scenes action.  The Daytona 500 is next week and I am pretty excited because we will be going, and Mark casually informed me we will be flying there the day of the race in a private plane!  Fun little perks are always a favorite for me!
 
 
Those are my favorites for this week!  Looking forward to a weekend home just hanging out and spending my time Sunday loving on my loves!  Hope you all have a great weekend!

Disney Help Please...

Happy Thursday Ladies!
 
Hope you are all having a great week so far!
 
We have been in Florida about 4 months now, and we are finally getting settled in!  There are so many great things so close by for us to check out, and now that we are settled for the most part we are ready to get out and do some exploring!
 
We are about 2.5 hours from Disney...and can you believe my kids have never been there!  Seeing as we live so close now, there is really no excuse for us to not go and check it out.  My kids are probably the only ones on the planet that never had a huge interest in going to Disney.  I mentioned it a couple of times to Olivia, thinking she would be all over it, and her response "Mom I don't know if I really want to go there"!!!  What kid doesn't want to go to Disney?!?!?!?
 
 
Probably one of the main reasons I never really looked into it, well frankly it completely overwhelms me.  I don't even know where to start.  I am sure there are lots that both the boys and Olivia would like, and I am sure that there are some things Olivia would prefer and the boys wouldn't, and vice versa.  Also, I am not a huge fan of swarms of people and long lines! 
 
So ladies today I am asking for your help!  Tell me all the tips and tricks of doing Disney with the family!  I need to know the best places to stay, eat, and what we need to see, and what we can skip!  I am thinking a long weekend trip, so like 3 days there. 
 
Can't wait to read everyone's tips and recommendations and start planning a little trip to Disney!

All Things Pink

Happy Wednesday Ladies!
 
I can't even believe we are almost halfway through February already!  I admit, I am totally OK with this month flying by!  March is one of my favorites months!  Not only is it my birthday, but Jack will be turning 14 on the 1st and somehow my sweet little girl will turn 8 on the 13th...those first two weeks of the month are my favorite!  Filled with cake, celebrations and presents!  Yes please!
 
With Valentine's Day coming up this weekend, I thought I would share all things pink with you today.  I know red is like the color of Valentine's Day, but when I think of this day, I think PINK!

This water bottle...I got the gold one last week, and it's worth the money!  It keeps my water ICE cold. 
 
 
I mean how cute are these pink rain boots?  I have a pair of red Hunters and when I got mine last year, pink wasn't available, had it been I would have had them!  Olivia has some pink hunters and she wears them all the time, even when it's sunny out!
 
 
 
My friend Cory (if you guys don't know her, go check her out, she just had twin boys and oh boy they are just adorable) showed this polish on IG a few weeks ago...it's the perfect pink! 
 
 
 

I have these Kate Spade earrings, I have quite a few pair, they are awesome and the pink is just perfect!

January Book Review

Happy Tuesday Girls!
 
Hope you've all had a great start to the week!
 
 
Back in the summer when my kiddos were up with their dad, I read two books.  I had stopped reading for years, and I read two books in July, and realized how much I really did love reading!  I didn't read at all during the fall, we got crazy busy with our sudden move, and well then it was the holidays...and well you know how it goes.  But one of my goals for 2016 was to read consistently!  I read 3 books in January and LOVED them!  I was so appreciative of everyone's book recommendations, so please, keep them coming!
 
 

THE HUSBAND'S SECRET

This was the first book I read, and I loved it!  Going into it I just assumed it was about a husband having an affair.  I had a hard time putting this book down.  It kept me interested during the whole story.  I would definitely recommend this!
 
 
BIG LITTLE LIES
I absolutely LOVED this book!  It was probably my favorite one I read last month!  I absolutely love this author!  It was another read that had me super excited  to pick up where I left off. 
 
 
WHAT ALICE FORGOT
Many people recommended this book to me, and I loved the other two I read by the same author, so of course I was excited to read it.  I really enjoyed this book as well.  It had me thinking the whole time...what the heck it would be like to just lose ten years of your life!  I read this book in one day!
 
 
ME BEFORE YOU
Quite a few recommended this book to me, I loved this story, but I have to admit, I was so disappointed in the ending.  I was totally expecting something totally different!  I didn't hate it, I was just shocked how it ended!
 
 
This is what I am planning on reading for February!  I am about halfway through The Hypnotists Love Story, and I am totally LOVING it!  I am excited to finish it and start the next two!  Let me know what else I need to read! 
 
I am still on the fence about getting a Kindle, I have so appreciated everyone's feedback about it!  I love holding a book in my hand to read, however book storage is something I don't really have, so that's kinda why I am leaning towards the Kindle!

Friday Favorites

I picked up this thin mint creamer at WalMart this week...and well I am LOVING it.  I also found this cute little mug at Kohls for 50% off.  Super cute mug and delicious creamer, definitely favorites of mine.
 
TWO
I signed up as a distributor with Plexus back in November and well kind of threw it all in my closet knowing I would start it in the new year.  I have been consistently taking the products for a few weeks now and I am definitely seeing changes!  If you are interested in a trial pack or would like some information, send me an email kimmskorner@gmail.com !
 
 
THREE
 
 
Chico is still a big favorite over here.  He loves his dog bed, and he makes us laugh with his crazy sleeping positions.
 
 
FOUR
I had a happy mail day the other day when these 4 new books were delivered.  Next week I am doing  a post on what I read in January, and my thoughts on each book.  I did read Me Before You, this week and I was so disappointed in the ending!
 
 
FIVE
I had some Nordstrom notes that were burning a hole in my pocket, so I ordered these and I love them!  I LOVE Zella, however I refuse to ever pay full price for it.  I was so excited these were on sale when I got them!  If you have never tried these, you need to.  Yes they are a bit pricey, but they are so awesome!  I wear them to walk, and just to run errands!  They are cute and comfy!
 
 
SIX
I ordered this S'well water bottle last week and it was delivered to me this week.  I was a bit hesitant about ordering it, it was, in my opinion, a bit pricey for a water bottle.  However I read a TON of reviews and reached out to a few people that had them and every single one of them said yes it was definitely worth the price tag.  I was back and forth between this one and the YETI water cup, and ultimately went with this one, well because I thought it was just much cuter:)  I would highly recommend this to anyone thinking about getting one! 
 
 
SEVEN
We are only 3 episodes in so far, we are hoping to finish it up this weekend.  I am not even sure what to think of this so far!  I ended the first episode in complete awe that a police department could be so corrupt like that!  Everyone keeps telling me around episode 4 is when it gets good.
 
Those are my favorites for the week!  I am so happy Mark has off this weekend, and we are so darn excited to watch our Panthers play in the big game this weekend!  We are hoping for good weather Saturday, we are wanting to take the kids to the playground and let them, and the dog, burn off some steam.!  And then Sunday, we will hanging out all day, anxiously awaiting the start of the big game!  Hope you all have a great weekend!  See you back here Monday, ........

February Goals

Happy Thursday Girls!
 
 
I know we are a few days into the month, but today I am sharing with you my goals for February, and looking back over how I did on my January goals! 
 
January goal recap....
 
1.  Read at least one book....well I read 3 books during January!  I am going to do a post next week recapping what I read in January!
 
2.  Only drink 1 Pepsi a day...some days were better than others for this one.  I did cut back tremendously however unfortunately more days than not, I had more than one pepsi...hoping to do better this month.
 
3.  Get to gym 3x a week....this didn't happen at all.  Never got there not even once.  My morning schedule is crazy driving the kids to school, and it is after 9:30 by the time I am done dropping the boys off, and I just don't feel like going to the gym that late in the morning.  I have started walking regularly here in my neighborhood.  I am considering buying a treadmill, so I can do it here, when it is convenient for me.
 
4.  Make finding time with Mark a priority....We did ok with this one, I am hoping to make it more of a priority this month.  This is Mark's busy season right now at work, se some nights he gets home late, and he is downright exhausted and he is working every other Saturday, so our time is limited.  We did manage a little lunch date, and we did go out with some of his co-workers last week, which was super nice.
 
5.  Sticking to our budget...surprisingly, I did pretty good with this one, and it wasn't nearly as hard as I thought it was going to be.  I did spend a little more than I had wanted to...with getting our new couch, I "needed" a few things for the living room.  I am pretty determined to save, and I am realizing I really don't "need" as much as I once thought!
 
So, though I didn't accomplish every goal on my list, I am OK with how the month went, and instead of feeling mad I didn't do it all, I am moving some things to this months list and just continuing to move on.....
 
So now it's time for my February goals.....
 

1.  CONTINUE TO SAVE AND WORK ON BUDGET
This will be something that I will need to continue to tweak and work on each month.  We have lots of goals for this year, so us saving and really sticking to the budget is important.
 
2.  HAVE AT LEAST 2 FAMILY NIGHTS
I know this probably may sound silly, not much like a goal, but with 3 young kids, and sports season fast approaching and school and homework, sometimes family time takes a back seat.  I am going to try for at least 2 nights where we all "unplug" and either all watch a movie together or play a game or something. 
 
3.  READ 2 BOOKS
Last month I read 3 books...and man I love reading and have loved everyone's recommendations,...please keep them coming.  Life is going to start getting busy again with spring sports, so I am hoping to get to read 2 books.  I am thinking about getting a Kindle, if you have one, let me know your thoughts.
 
4.  GO TO BED EARLIER AND WAKE UP EARLIER
This could be the toughest for me this month.  I am definitely a night owl, and not so much a morning person.  I set my alarm every morning for like 5:45, but more times than not, I am hitting the snooze button, waking up at the last possible second.  I hate when my mornings are rushed.  I am going to try and be in bed each night by 11, and not only set my alarm, but actually get up by 6 each morning.  I find the days go much smoother, if I have some "quiet time" in the morning.
 
5.  LOOK INTO SUMMER ACTIVITIES FOR THE KIDS
Again, this may sound like another silly goal, but it is something that I do need to accomplish this month.  Summer will be here before you know it!  Our summer will be different for sure this year.  Olivia goes to a year round school, the boys do not.  They all have off the entire month of June, but Olivia starts back right after the 4th of July.  I am definitely looking into a few things to keep them busy during the month of June.
 
6.  WALK 3X A WEEK
I am not sure if a gym membership is for me right at this time, but I do need to do something, so I am hoping to walk immediately after school drop off.
 
7.  BE MORE MINDFUL OF WHAT I AM EATING
Again, this will be tough for me.  I love to eat, I love food, and eating makes me happy.  I do love fruits and veggies, but I much prefer cake!  ha!  I hate the word "diet", they never work, and I feel like if I start depriving myself of things I love, it is like automatically setting me up to fail.  I believe in everything in moderation...well that is for sure easier said than done!  Anyway...I am just going to watch what I am eating, and try to make better choices.  I am also going to really try not to eat at night after dinnertime.  That is my downfall...I could go all day without eating, but at 8pm could sit down and eat chips and cookies!  So my goal is to be better about my food choices, limit my desserts during the week.  I am hoping to get myself to the point where I am mindful during the week, and then just do what I want, in moderation, on the weekends.  Then it becomes a lifestyle and not a diet.
 
So there are my goals for this month!  Can't wait to report back next month to see how I did with them!

Super Bowl Snacks and Such

Happy Wednesday Ladies!
 
Hope you are all having a great week!  If you guys read here often, or follow me on social media, you know me and my little crew over here LOVE football!  There is nothing better than spending a Sunday, hanging out with my crew watching some football!  And of course, eating lots of yummy football food is a MUST!
 
  We are extra super excited this year for the Super Bowl because The Carolina Panthers are playing!  I have been a NY Jets fan since I was in high school, and they will always be my #1 team, but when I moved to Charlotte 10 years ago, the Panthers became my second favorite team.  And it really is OK to have two favorite teams!  While living in Charlotte I was fortunate to attend many games, and the atmosphere in Charlotte when the Panthers play is just amazing!  I seriously believe that Carolina has the BEST, MOST LOYAL fans in the NFL.  The entire city gets behind that team!  We lived in South Charlotte, and I was fortunate enough to meet some of the players, as they lived near me.  So needless to say, we are freaking excited to watch the Panthers play in the Super Bowl this year!
 
This pretty much sums it up!
 
For as long back as I can remember, since I have had kids, we have always stayed home and watched the big game with the kids.  One year, Mark and I went to a party one of his co-workers hosted, and though it was nice, we both decided, home, with the kids, is definitely where we prefer to watch the game.  I notice that at Super Bowl parties, the guys usually watch the game, the kids play, and the wives usually talk...well, I actually want to watch the game, so do my kids, and we have the best time watching it all together!
 
We always let the boys stay up until the end of the game...they should seriously start the game earlier! 
 
Every year we pretty much eat the same things for the Super Bowl, it is kind of like a tradition and Jack and AJ really look forward to it, and have already started talking about what we are going to be eating!
 
I always buy some fun, football paper products.  I usually just grab some football plates and napkins and some helium balloons from the grocery store.  It really is those little tiny things, that our kids remember most and look the most forward to.
 
I never took any pictures of our food from last year, so I don't have any personal pics to share with you guys, but I am going to share some of our favorite Super Bowl Snacks to eat!
 
I always put out bowls of chips and dip, and always a fun little veggie platter.  If my kids can dip it in ranch, they will eat just about anything!
 
Here is basically what you will find at our house on Super Bowl Sunday!
 
POTATO SKINS
We love potato skins, and we always make them ourselves, so much cheaper and so much more delicious.  We just cook like 10 potatoes, scoop them out (Olivia eats that part) and then fill them with lots of bacon and cheese, bake them and serve them up with some sour cream!  So darn delicious!
 
CHEESE/CHIPS/DIP
We love cheese over here, and my kids love being able to dip stuff!  We always set out a little platter with some crackers, a few bowls of chips, some French onion dip, and a few of our favorite cheeses.  Right now we are loving pepper jack cheese with jalapenos.  AJ has a strong love for salsa, so we will of course have some tortilla chips and salsa!
 
SAUSAGE, PEPPERS & ONIONS
Pretty much every Sunday during football season we eat these sandwiches.  So we always have it for the super bowl also!  I love it because I can throw it all together in the morning, and just throw it in the crock pot and it's ready for later in the day!  I love letting it cook all day, it is so yummy!
 
CHICKEN NUGGETS
Mark makes the absolute best homemade chicken nuggets I have ever tasted.  Chick Fill A has got nothing on him:)  This is another thing, we can make ahead and just heat up.   We love having a big platter of these on the table, with a few dipping sauces.
 
MAC & CHEESE
The Super Bowl of 1993, my first super bowl as a mom...it was the day I made the best ever mac and cheese.  23 years later, this is still one of my favorite things to make, and every single year for the Super Bowl for the past 22 years I have made this...and once again we will make it again this year.  I make it a few other times during the year, but my kids would be completely devastated if we didn't have it!  I am going to share the recipe with you, it is hands down our favorite! 
 
When I make this I always double this recipe, it tastes even better left over:)
 
2 cups uncooked elbow macaroni
1/4 cup butter or stick margarine
1/4 cup all purpose flour
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ground mustard
1/4 tsp Worcestershire sauce
2 cups milk
2 cups shredded sharp cheddar cheese
handful of breadcrumbs
 
1.  Heat oven to 350.
 
2.  Cook macaroni as directed on package.
 
3.  While macaroni is cooking, melt butter in 3 quart saucepan over low heat.  Stir in flour, salt, pepper, mustard and Worcestershire sauce.  Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.  Stir in milk.  Heat to boiling, stirring constantly.  Boil and stir 1 minute; remove from heat.  Stir in cheese until melted.
 
4.  Drain macaroni.  Gently stir macaroni into cheese sauce.  Pour into ungreased casserole dish.  Sprinkle breadcrumbs over the top.  Bake uncovered 20-25 minutes or until bubbly!
 
ENJOY!
 
This is probably our favorite thing to eat during the super bowl!
 
COOKIE CAKE
For the past 7 or 8 years we have always had a cookie cake, the kids love it!  I do too...I mean a big giant chocolate chip cookie with frosting....YUM!
 
CUPCAKES
I make cupcakes every year for the super bowl, and usually make the icing the color of the team we are rooting for!  This year there will be lots of blue and black over here!  GO PANTHERS!
